Single-Serve Breakfast Casserole


Our Christmas Breakfast 2013:


I usually make breakfast casserole twice per year....Easter and Christmas.  In my head, it's a very time-consuming dish, so I save it for special occasions.  But, really it's not that bad!!!  And I recently discovered an even easier way to make it...in the microwave in single servings!!! Brown the meat ahead of time, and the rest can be made fairly quickly in the morning.

Ingredients:
About 4 oz. ground pork or turkey sausage, browned (I usually brown an entire pound at once and freeze or refrigerate the rest)
1 piece of buttered bread, crust removed
1 Tbs. shredded cheddar cheese
1 egg
1 Tbs. milk
Cooking Spray

Directions:
1. Spray a small bowl with cooking spray. Add the piece of buttered bread.
2.  Sprinkle the cooked sausage on top
3. In a separate bowl, whisk together the egg and milk.
4. Pour the egg/milk mixture on top of the cooked sausage.  Sprinkle with cheese.
5. Microwave for 45 seconds.  Optional: add a little more cheese and cook for another 10 seconds.
6. Remove from bowl and allow to cool on a plate for a couple minutes.  Enjoy!

I cut my bread into a circle with a sandwich cutter so it fits nicely into the bowl;)









Kid approved!!! ;)

The Not-So-Fashionable Mom

I WANT CANDY!!!!!!!  It's been a crazy week as usual around our house!  Halloween parties, Trick or Treat preparations, weddings, swimming lessons, cleaning, cooking and all else that comes with being a Mom!!  And I can't stop eating all this CANDY that's lying around!!!!!

Jim and I got a night away! We attending a beautiful wedding and danced the night away at the reception...hehehe!




It was Costume Night at church!


Mister finished swimming lessons!

What's in my Mom Kit?

"I need a Band-aid!!!!!!!!!!" I think we moms hear that phrase at least a couple times a week, right?!!!    And we better have one handy or the child's finger might just fall off ;)!!!

I wanted to share the "Mom Kit" that I keep in my purse and all the "necessities" that I keep in it.  Yes, it's a little bulky and the reason why I carry a large purse.  But I'd rather be prepared with a sore shoulder than to be unprepared!!




So...here is the list of all the items I keep in my Mom Kit:
-Clear zipper bag (this one on Amazon would work great, or even just a Ziploc bag!)
-Gauze (great when kids lose teeth)
-Bandages (2 sizes)
-Shout wipes
-Tampons
-Lysol To Go
-Perfume
-Anti-itch cream
-Sunblock stick
-Eye drops
-Contact case
-Hand sanitizer
-Neosporin
-Disposable toothbrushes 
(yes, I photoshopped those into the pic since I recently used up my last one!)
-Cold meds
-Splenda & Truvia
-Floss
-Tylenol/Advil
-Tums
-Nail file
-Safety pin
-Altoids

My kids are now old enough to understand about meds, but when they were younger, I didn't have the loose meds in my purse. I used a secret box or a kid-proof bottle.

Another busy and event-filled week for us!!! It was homecoming at Ohio University, so we made the trip down to celebrate!

The Not-So-Fashionable Mom

Happy Monday, my friends!!!
Wow, things have been a little crazy around here!!  I'm dealing with a bit of a health issue, among all the other busyness of Fall!

Here are a few things I've been busy with the last week:

Mason turned 4!!!!
I have a twin sister and she and I were pregnant at the same time with our second children.  She was due 12 days before me, and I ended up delivering first, 6 days before her.  Here is our blog that we started over 4 years ago to document everything: PREGNANT TWINS. We don't keep up on the posts much anymore, but I love looking back to the time while we were pregnant!  Wow, time flies!!




We did a remake of a picture from Mason's 1st birthday party!!! 

We had our first girl scout overnight campout, which turned in to a camp-in due to the cold weather! We had a great time making dinner, s'mores, breakfast, doing crafts, skits, and a little sleeping;)
